HHH The California roll first appeared on menus in the late 1970s, but the name of the chef who came up with the recipe remains a matter of controversy. This inside-out sushi roll helped to make the fish-and-rice delicacy popular around the world. Rajan Datar traces the story of sushi back to its origins in China 2,000 years ago; adopted by Japan, it became a dish with a vast variety of regional styles and recipes.
