TODAY’S RECIPE: One-pot coconut fish curry

GREAT with rice and yoghurt. Serves: 4.

Ingredients

1 tbsp rapeseed oil 1 onion, chopped 1 garlic clove, crushed 1 tsp turmeric 1 tsp garam masala 1 tsp chilli flakes 400 ml coconut milk 390g fish pie mix 200g frozen peas 1 lime, in wedges

Method

1 Heat oil in saucepan, add onion and pinch of salt, and fry until translucent. Add garlic and spices and cook for another minute, adding a splash of water to prevent sticking. Stir in coconut milk and simmer for ten minutes. 2 Add fish pie mix and peas, and cook for three minutes. Season and add lime juice to taste.
