Method

1 Heat oven to 200c/180c fan/gas 6. Toss rhubarb, apples, vanilla and caster sugar in an ovenproof dish and roast for ten minutes.

2 Mix flour and ginger together in a bowl. Rub in butter with your fingertips until mix is the texture of chunky breadcrumbs. Stir through brown sugar. Sprinkle crumble on fruit and cook for 30 minutes until golden brown.
