RECIPE: Sausage casserole with garlic breadcrumbs
HEARTY one-pot dish. Serves: 4.
Ingredients
3 tbsp olive oil, plus extra to drizzle
8 large pork sausages 1 onion, sliced
Sprinkle of golden caster sugar
1 tbsp red wine vinegar
1 tbsp tomato purée
½ tsp smoked paprika
400g can tomatoes
100ml red wine
2 bay leaves
400g can butter beans, drained
50g breadcrumbs
2 garlic cloves, grated Handful parsley
leaves, chopped
Method
1 Heat oven to 220c/200c fan/gas 7. Heat 1 tbsp of oil in casserole over medium heat and fry sausages until brown. Set aside on a plate. Fry onions until golden. Sprinkle in sugar and cook for a minute before stirring in vinegar, tomato purée and paprika. Add tomatoes and wine, bay leaves, beans and sausages. 2 Bring to a simmer, then bake in oven for 20 minutes. Mix breadcrumbs, garlic and parsley and stir in 1 tbsp oil. Scatter over casserole, drizzle with remaining 1 tbsp oil and bake for ten minutes until golden and crisp.
