RECIPE: Salmon and purple sprouting broccoli grain bowl

FILLING healthy lunch. Serves: 2.

Ingredients

2 ½ tbsp rapeseed oil

½ tsp honey

½ tsp wholegrain mustard

1 lemon, juiced

200g purple sprouting broccoli, chopped

1 garlic clove, sliced

250g pouch of mixed grains

Handful parsley, chopped

Handful dill, chopped

160g radishes, cut into chunks

200g cooked salmon, in chunks

Method

1 Mix 2 tbsp oil with the honey, mustard, lemon juice and seasoning. Set aside.

2 Bring a pan of water to boil. Add broccoli, cook for three minutes, then drain.

3 Heat remaining oil in frying pan. Add garlic, sizzle for one minute, then tip in mixed grains, using the back of a spoon to separate. Add broccoli, mustard dressing, herbs and radishes. Mix, season and stir through cooked salmon. Serve warm or cold.
