Pizza pitta

SERVES 1

• Low-calorie cooking spray M 1 shallot (or a couple of spring onions), finely chopped

• 1 small red or yellow pepper, deseeded and chopped

• ½ tsp dried herbs

• 4 cherry tomatoes, chopped M 60g wholemeal pitta bread M 50g mozzarella, cut into chunks

• Fresh oregano, leaves picked, to serve

• Salad, to serve

SPRAY a frying pan with lowcalorie cooking spray and place over a medium heat. Add the shallot (or spring onions), pepper and herbs and cook for about 5 minutes or until starting to soften.

Add the tomatoes and cook for a few more minutes.

Halve the pitta, scatter over the cheese and lightly toast. Top with the cooked veg, sprinkle with fresh oregano and serve with a salad.
