READY IN 20 MINUTES SERVES 1
Low-calorie cooking spray 1 shallot (or a couple of spring onions), finely chopped
1 small red or yellow pepper, deseeded and chopped
½ tsp dried herbs
4 cherry tomatoes, chopped 60g wholemeal pitta bread 50g mozzarella, cut into chunks
Fresh oregano, leaves picked, to serve
Salad, to serve
SPRAY a frying pan with lowcalorie cooking spray and place over a medium heat. Add the shallot (or spring onions), pepper and herbs and cook for about 5 minutes or until starting to soften.
Add the tomatoes and cook for a few more minutes.
Halve the pitta, scatter over the cheese and lightly toast. Top with the cooked veg, sprinkle with fresh oregano and serve with a salad.
